The muffin recipe is easy to make and super versatile.
Actually, I made this recipe for the legacy blog, and since that first recipe, I’ve made several different versions of this yummy treat. One of the last versions was vegan.
And that’s the best part of the recipe: creating the way you want is easy. There are no rules with the recipe.
Nova from My Single Dad (Man Card Book Three) grabbed a mixing bowl and sat it beside the 6 x 9 notebook that looked like it had seen better days. The book was full of all her recipe ideas. She scribbled thoughts, and changed ideas after testing several times while baking, so you could see drips from many syrups and sauces on every page.
She was really excited to share the most recent idea with Zander. The Morning Berry Banana Muffins could sell so well at the coffee shop.
“Warmth from the oven.” Zander walked into the kitchen and directly over to the 350-degree Fahrenheit oven. “Does this mean you have another recipe idea brewing?”
She stepped up behind him to wrap her arms around his waist and rested her head against his back. “You know me too well.”
He carefully spun around, making sure not to untangle from her embrace. “Is it a donut or scone recipe?” Zander mirrored Nova and wrapped his arms around her waist.
“Nope.” She leaned on her tippy toes and kissed his nose before returning to where the mixing bowl sat on the counter. “We need a new muffin recipe, don’t you think?”
“Oh, yes. Tell me more?”
She proceeded to share all the ingredients. “Plus, it’s a recipe anyone would love. I mean–“ she poured a cup of all-purpose flour into the bowl– “who doesn’t love berries and bananas?”
“You might be surprised, but I have a feeling more than you think.” He kissed her temple and walked around the kitchen island to sit on a bar stool. “I agree; that sounds like a perfect recipe for our customers.”
When I first started my legacy food blog, I joined this group called Muffin Monday. We all made one specific muffin recipe together and made time to visit each other’s blogs to see how each recipe turned out.
Being a part of the group was fun; I made so many different muffins. That also means I have a ton of muffin recipes tucked away on my external drive, just waiting to be loved again.
After close to a year, I stopped doing muffin Monday, but I didn’t stop making muffins.
These morning muffins have had the opportunity to be a little bit of everything. The vegan version was so yummy, and the time I used Dole fruit juice was really creative.

The muffin recipe is easy to make and super versatile. It's full of berry and banana flavors and perfect with your morning coffee or tea.
Ingredients

8 oz/1 cup frozen berries (thawed), drained
- 1 large banana, roughly mashed

4 oz half and half (or favorite milk)

4 oz butter, melted and cooled
- 2 (4 oz) large eggs
- 8 oz/1 cup All-purpose flour

8 oz/1 cup sugar

1 Tbsp baking powder
- 1 tsp salt
- 2 tsp vanilla extract
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 8 oz/1 cup flour
- 6 oz/3/4 cup brown sugar
- 2 oz /1/4 cup granulated sugar
- 1/4 tsp salt
- 4 Tbsp butter, melted and cooled
Streusel (Optional)
Directions
- Preheat oven to 350 degrees Fahrenheit. Grease the muffin pan with cooking spray, and make sure to get all sides and bottom to prevent sticking to the pan.
- In a medium bowl, add mashed banana, milk, melted butter, eggs, vanilla extract, and sugar. Mix ingredients together well, but don’t over-mix.
- In a small bowl, add flour, baking powder, salt, cinnamon, and nutmeg.
- Pour the dry ingredients into the wet ingredients. Next, add the berries and mix the ingredients together. Don’t over-mix, just mix enough to ensure all ingredients are well incorporated.
- Spoon batter into prepared muffin pan and bake for 20-25 minutes if you used a standard muffin pan or 25-30 minutes if you used a large muffin pan. Every oven is different on cooking times, use a toothpick or a knife to check if the muffin is cooked all the way through. Let cool before removing from muffin pan.
Recipe Note
Optional: In a small bowl, add flour, brown sugar, granulated sugar, salt, and melted butter. Use your hands or a fork to mix ingredients. Sprinkle the streusel on top of the batter for a fun spin on a delicious recipe. Use the same baking times above.
