Amaretto Apple Cranberry Scones
If you like apple cranberry juice, then you will understand why apple cranberry scones will become your new favorite treat. These scones scream Fall in a serious way with each bite you take. For the main ingredient I used amaretto apple butter made at my family's apple barn in Freeland, Michigan. Then add the cranberries to provide that burst of tartness with each bite. I think these may be my most favorite scones I made on my blog. Who would like a slice of Amaretto Apple Cranberry Scones to go with your coffee or tea?
1/2 cup sugar
1 cup (2 sticks) cold salted butter, cubed
1 cup amaretto apple butter (or any apple butter flavor)
1 cup fresh cranberries (you could use blueberries or raspberries)
3 cups all purpose flour
1 1/2 Tbsp baking powder
1 1/2 tsp salt
Preheat oven to 350 degrees F. Spray cookie sheet with cooking spray.
In medium bowl, mix together eggs, apple butter, and sugar. Set aside.
In medium bowl, mix together flour, baking powder, and salt. Add the cubed butter, start breaking up and mixing the butter with the flour mixture, mix with hands or pastry cutter. You want the butter completely broke up and mixed into the flour well, the flour will look crumbly. Add the cranberries to flour mixture and coat all sides, then the cranberries will not fall to bottom of scones.
Mix the wet and dry ingredients, but very important - do not over mix the batter. So just incorporate all ingredients and then add to prepared cookie sheet. Form batter into a circle until 1 inch thick all around. Cut the slices into batter before cooking.
Bake for 30-40 minutes depending on oven. Scones should be golden brown and toothpick should come out clean when cooked fully.

Optional: You can add a glaze - 1 cup powdered sugar, 2-4 Tbsp water (or amaretto).
